Artisan Chocolate

We have the pleasure of adding single-origin chocolate bars to our selection of tea and coffee. They are artisan made with one brand, Duffy's Chocolate, being one of the few 'bean-to-bar' chocolatiers in the country. His chocolate is renowned worldwide yet is made in our home county of Lincolnshire. Chocolate compliments both tea and coffee. What will your favourite pairing be?

    This 'bean to bar' milk chocolate is made from the rare Honduran 'Xoco Criollo' beans. A smoothly balanced, strong milk chocolate with hints of sweet currants, blueberries and a dark treacle aftertaste in the 61% cocoa content.

    Raspberry and rich red fruit tones create a zesty character. On the north-west coast of Madagascar lies the Sambirano Valley, with the sea to the west and volcanic hills to the east. Its warm, humid micro-climate and rich volcanic soil makes it the ideal place for growing cocoa. Contains 84% cocoa solids. The taste notes shown here are derived from the cocoa bean itself not from the addition of any fruits or flavourings.

    This 'bean to bar' milk chocolate is made from Panamanian Tiera Oscura cocoa beans, grown by Dorothy, the farmer. Fruity butterscotch notes with hints of liquorice and dark cherries can found in the 40% cocoa content.

    Panela is a non-refined raw sugar made from dehydrated cane juice with a caramel-like flavour, rich in vitamin A, B, C, D and E, phosphorous, calcium, iron, magnesium and potassium among others. Its natural, caramel flavour enhances any beverage, drawing out clearer flavour notes in the finished drink.

    Bold flavours reminiscent of dates, walnut and red fruits. It is a little misleading to call Karkar an island, as it is in fact one large volcano. 60 miles across, and visible from over 50 miles away. But the rich soil you find here on the sides of the volcano is ideal for growing the finest cocoa, with its bold flavours. Contains 72% cocoa solids. Situated on the most southerly of the larger islands of the Philippines � and in the �Goldilocks zone� 10 degrees either side of the equator � the cocoa farmers of Mindinao Island have the ideal combination of tropical rainforest and volcanic soil.
