PHILIPPINES MINDANAO ISLAND 73% DARK CHOCOLATE BAR
Philippines Mindanao Island
Mindanao Island In the “Goldilocks zone” 10 degrees either side of the equator – the cocoa farmers of Mindinao Island have the ideal combination of tropical rainforest and volcanic soil. It's warm humid micro-climate and upstream rich volcanic soil is perfect for growing a cocoa bean with a distinctive chocolate flavour complemented by hints of honey, fig and citrus notes.
Much of the cocoa farmed here is grown on family-run farms under the shade of coconut and plantain trees, surrounded by other crops the farmers grow for themselves and their families. And once they harvest their crops, the farmers combine them, which makes fermenting and drying the cocoa easier for everyone. Collaborating like this means that small individual family farms can make a profit, and everyone involved in the process benefits.
