We buy decaffeinated beans processed using the natural 'Swiss Water' or CO2, sometimes called 'Sparkling Water' method. The quality of the beans we choose means that although lacking in 'buzz', the character in the cup is hard to differentiate from regular coffee.

As low as £13.00El Eden is a blend from 16 entrepreneurial farmers in the Armenia, Quindío region of Colombia. Scored a whopping 83.25 by the independent coffee graders of the SCA (Specialty Coffee Association), which is higher than most non-decaffeinated speciality Colombian coffees! The only thing you’re not losing is sleep! The graders commented on the aromatic and flavour notes, which included red fruits, fig, chocolate, caramel and peach. Picking from their mainly Castillo, Catimor and Caturra varietal planted fields, the coffee is typically wet processed the same day as picking and dried on either ‘Casa Elba’ patios, or drying beds on rails or with a roof that is on rails to protect from weather.

Since 2012, the farm has been progressively updated, redesigned, and reimagined as a separated varietal garden, including red and orange bourbon coffees, Pacamara, Kenya, Bernardina, Mokka, and of course Pacas varieties. The citrus character from Sidamo really adds another dimension to the cup. The only thing you’re not losing is sleep! This coffee is washed, with beans removed from the cherry through a de-pulper, before passing through a fermentation phase for 12-36 hours. Once this is finished the cherries are washed in clean water and then dried on traditional raised beds or occasionally patios. Local smallholders grow heirloom varietals known locally by names such as Kumie, Diga, and Wilsho.

Secondly, the method of decaffeination is designed to remove only the caffeine and not the precious flavour compounds that give coffee its character. The Mountain Water Process involves immersing the coffee beans in water to extract the 99.9% of the caffeine. No chemicals are used, and a filtering process allows the beans to maintain their characteristic flavour. The Mountain Water Decaf process uses clear, pure water from the glaciers of the Pico de Orizaba Mountains in Mexico, although often the coffee we choose is not in itself Mexican. This dark roast makes a phenomenally good espresso or base for a latt� and cappuccino.
