The leaves used to make Magic Dragon Pearls are from the highest-grade spring teas picked around the time of Qingming, or pre-Ming festival, about two weeks after the spring equinox. The young tea leaves are distinguished by white hairs found on the underside of the leaf, which when oxidised turn a golden colour that add to the distinctive appearance of the rolled pearls. The hair also contains much of the flavour and antioxidant content. The tea is produced in Fengqing in the Yunnan Province of China at an altitude of around 1800 metres. The leaves are hand picked and hand rolled and made from the Huacha varietal. This large leaf species contains a large amount of tea polyphenol and catechin. Usually in spring teas there are 2.9% of amino acid, 30.2% of tea polyphenol, 3.2% of caffeine and 13.4% of catechin. The liquor is smooth, rich, naturally sweet with subtle chocolate and raisin notes. We would suggest using 3-4 pearls per cup if taking the tea with milk.
