Grown in Kirishima, at the foot of an active volcano in southern Japan, this is a limited vintage made with carefully matured leaves from peak 2023 harvest, processed this spring. It is a masterpiece of terroir, skill, and tradition. The volcanic ash from regular eruptions naturally enriches the soil, contributing to the tea’s unique flavour complexity.

Each plant is carefully covered with silver shading nets, forcing the leaves to draw more nutrients from the earth. The result? An organic matcha of exceptional finesse with a gourmet taste profile of white chocolate and tropical fruit, rich in umami and without bitterness due to the careful maturation of the raw leaves.

This matcha is made from an 80% Saemidori cultivar, shade-grown, stone-ground, and processed in a certified organic facility using Nishi-san’s unique production methods—methods that elevate this tea to true artisan status.

This tea is made using traditional Japanese techniques passed down through generations. Unlike mass-produced matcha—which is harvested 2 to 3 times per year with chemical inputs—this matcha is certified pesticide-free, and lab-tested for safety, purity, and quality.

Each 30g tin is produced in small batches and ground at a low speed (just 30g per hour) on handcrafted granite mills. This protects the matcha from heat damage and ensures the resulting powder is extremely fine, preserving all the flavour and nutrients.
