Matcha – The Hare is a finely stone-milled, first flush Japanese matcha made from a carefully balanced blend of Saemidori from Kagoshima and Yabukita from Shizuoka.

Saemidori is prized for its vivid green colour, gentle sweetness and soft umami, while Yabukita brings freshness, structure and a clean, classic green tea character. Together they create a bright, smooth and beautifully balanced matcha with both depth and clarity.

Matcha can be intense, but at its best it is also wonderfully refined: fresh, mellow, gently sweet and rich with umami. The Hare captures that feeling of calm alertness — a bright green cup with energy, poise and clarity.

The first flush tea leaves are shaded before harvest, then carefully processed into tencha and slowly stone-milled in Shizuoka by a fourth-generation Japanese tea manufacturer. This low-speed milling produces an exceptionally fine powder while helping to preserve the colour, texture and delicate flavour of the leaf.

This is a refined drinking matcha for traditional preparation with water, but it can also be enjoyed iced or as a latte.

How to prepare:

Sift 1g, about ½ tsp, and add a little cold water to make a paste. Add a further 60–80ml of 60–80°C water, then whisk until frothy.

For a latte or iced matcha, mix with a splash of warm water first, then add milk, cold water and ice. Sweeten to taste.

Storage:

Reseal tightly. Store in the fridge. Once opened, best enjoyed within 8 weeks.
