Finca Pocitos is a third-generation family farm in Veracruz, Mexico, and home to one of the country’s most exciting Geisha projects. At 1,450 metres above sea level, producer Carlos Cadena Valdivia cultivates select microlots with a focus on innovation, quality, and traceability.
This natural Geisha is a limited-release lot that showcases everything we love about high-elevation Mexican coffee: layered tropical fruit, crisp florals, and elegant structure. Each cherry is handpicked at peak ripeness (around 25° Brix), sorted via flotation, and then fermented in sealed tanks for 36 hours of anaerobic processing. Drying is done in two stages—initially in the sun to halt fermentation, followed by slow, shaded drying on raised beds for approximately 30 days. This meticulous approach preserves clarity while building complexity.
