This is the highest quality Sencha from Kagoshima Prefecture, made from 'Shincha', or first flush tea which is the most highly prized plucking in Japan. It has sweet, smooth liquor which has a rich, 'umami' quality in the cup with very little astringency with notes of citrus, green muscat, flowers, creaminess, fresh greens, melon, fresh grass fragrance and nettle flower nectar. It is grown in pure, natural land.

This is the highest quality Sencha from Kagoshima Prefecture, which is located at the southwest tip of Kyushu, the third largest and southernmost island of Japan. It is made from 'Shincha', or first flush tea, which is the most highly prized plucking in Japan. Yutaka Midori strains of tea bush are used for their sweet, rich liquor, which has a rich, 'umami' quality in the cup with very little astringency. It is often compared to the famous 'Gyokuro' teas of Japan. The tea is made using the 'Fukamushi Cha' or deep steaming process. Whilst all Japanese green teas are steamed this is given approximately one minute longer than other green tea. It is a jeopardy filled minute as it takes great skill and knowledge to produce a great tea but it is very easy to ruin. As such there are very few tea growers in Japan able to do it. Deep steaming causes tea leaves to lose their shape and become broken but the payoff in flavour and fragrance more than compensates. All cultivation and processing is done in the tea garden. No chemical fertiliser or pesticides are used to maintain the purity of the tea. Instead, a natural Japanese recipe for fertiliser allows the new growth to develop slowly, nourishes the soil, and keeps the tea bushes vibrant and healthy which creates a much more pure, clean, delicious tasting cup of aromatic tea.
